Our Winemaking Philosophy
The Posthof knows how to combine excellent, traditional and modern ways of winemaking as it is typical for the new generation of viniculturists (winemakers). Exceptional are the manual vintage and the time and work consuming gentle treatment of the vineyards, grapes and young wines.

Therefore only a high valued harvest finds its way to our estate where the grapes are processed with a minimum of stress. This means no unnecessary pumping and a gentle pressing with a state of the art wine-press. In the continuing process we make sure that only those influences contribute to the development of the wine that make it typical for its kind, region and vintage. For that purpose we use for example only natural methods of filtering. Hygienic high-grade steel vats enable a slow fermentation at a stable temperature and we keep the developing wine under careful supervision. During the maturing process most of our white wines are stored in steel vats whereas the red wines develop their character in our wooden vats. The result are white wines of a pure and crisp taste and full-bodied, harmonic red wines. (to see what we are currently doing in the cellar and vineyards look under "Aktuelles aus dem Keller und dem Weinberg")

For our extremely time consuming way of winemaking we have received acknowledgement by a quickly growing amount of regular customers, awards at comparing tastings and contests, as well as many positive recognitions in technical literature. For example the Gault Millau Wine Guide wrote:
"...already the collection of the 1996 vintage was of surprising quality. The 1997 wines might even be slightly better – pure and of delicate fruit with well embedded acid…" (translated from the original German text)

Especially the white wines typical of our region as the Silvaner and Riesling gain from our way of winemaking. For example one of our "plain" 1999 Silvaner won at an international Silvaner competition and at the 1997 award for German Riesling-winemakers of Vinum and ProRiesling, our Riesling wines got us the title "whizz-kid 97" in the national wine journal Vinum.
